Tortilla Soup with Cheese Quesadillas

Cheese quesadillas with tortilla soup

Flour tortillas
Mozzarella cheese
Sharp cheddar cheese
Lay the tortilla on a hot non-stick skillet. Let it warm for a few seconds. Add cheese to half of the tortilla. Fold in half. Let the cheese melt and flip. Super quick, super easy. You can add other things like tomatoes and chicken, but I prefer plain cheese.

Tortilla Soup Recipe

Ingredients
corn tortilla chips, broken into pieces
small onion, chopped (1/2 cup)
2 cloves garlic, finely chopped
4 cups chicken broth or stock
1 can (14.5 oz) tomato sauce
1/2 teaspoon salt
2 chicken breast shredded
1 can of corn
1/2 cup shredded Monterrey Jack cheese (2 oz) (or other mild, melting cheese)
Chopped fresh cilantro or juice of 1 lime
Tablespoon of taco seasoning
Directions:Cook onion in Tablespoon of olive oil 2 minutes, stirring frequently. Add garlic and corn; cook 2 to 3 minutes, stirring frequently, until tender. Stir in broth, tomato sauce and salt. Heat to boiling. Reduce heat; cover and simmer 15 minutes. Add chicken, cilantro and lime juice; heat until hot. To serve, ladle soup into bowl and top with cheese and broken tortilla chips.
