Tacos/Taco Salad

Tidbit: Do you ever find yourself at a dinner where the chef is very generous in suggesting seconds? My family is Italian and famous for this. We have but one rule in our house when it comes to meal time: If you leave hungry it's your own fault. But here is a tidbit of help for food pushers when you truly are full. Go back for seconds or thirds but take only a few tablespoons instead of a whopping serving spoonful. Or, don't explain yourself. A simple no thank you should suffice. If you say things like you're watching your weight or trying to lose some, this might strike up a conversation you never intended on having...

Tacos/taco salad

1 lb. lean hamburger
½ head of lettuce
sour cream
salsa/taco sauce
2 cups shredded cheddar cheese
taco seasoning

Directions: Brown hamburger in a skillet. Drain excess grease. Add taco seasoning, and 3/4 cup of water. Let simmer until all water is gone. Layer shells with meat, cheese, lettuce, salsa, and sour cream. This is a great one if you have left over tortilla chips or the shells you bought for tacos broke.
