Jane Bear's Chicken Salad


Jane Bear’s chicken salad

3 cooked chicken breasts cut up
4 green onions chopped
1 head of lettuce
16 wonton wrappers cut into 1/4ths
Dressing: ¼ cup EVOO
3 TBSP sugar
1 TBSP sesame oil
Pinch of salt
3 TBSP rice vinegar
Pinch of pepper

Directions: Combine lettuce, green onion, and chicken. Drop squares of wonton wrappers in shallow hot oil and fry until light brown. Drain on paper towel and add to salad. Prepare dressing and pour over salad toss, serve immediately.
